While at the grocery store a week or so ago, I came across ground chicken that was on sale for $0.99/pound. Woot Woot! I had never cooked with ground chicken before, but at that price, I was sure I could figure out something. I snatched up the two pounds that were left.
Kb was not thrilled with my find. And it was not until I got home that the mysteriousness of ground chicken dawned on me.
Hmmm.
Nonetheless, it had been purchased and we were going to eat it. I quickly filed the questions into the back of my mind.
I successfully found a few recipes online that contained ground chicken. The first recipe I tried was chicken parmesan meatloaf. Just the mention of meatloaf may cause some to cringe. But this version more closely compares to chicken parmesan than typical meatloaf. The ground chicken is flavored with Italian type seasonings and topped with spaghetti sauce and cheese. That cheese is what takes the cake. I bet I could top anything with a healthy layer of melted cheese and Kb would eat it up.
Indeed, we ate it all!
Beyond the layer of cheese, the meatloaf did taste good. I'm a big fan of garlic and Italian seasonings, and the ground chicken took up those flavors very well.
The second ground chicken recipe I made was cheesy chicken meatballs. Kb saw me plopping the meatballs on the pan prior to baking. He determined that they looked less like balls and more like chunks. Chicken chunks just does not sound near as appetizing.
After baking, they looked a little more like balls. I whipped up some mashed potatoes and gravy because everything tastes better when paired with real mashed potatoes. Can I get an amen?!
The meatballs were pretty good. I do believe that Kb had thirds, but I was a little disappointed, primarily because I could not taste the cheese. They were also on the dry side. If I make these again, I would mix up some cheese sauce to pour over the meatballs and solve all of my problems.
