There is dirt beneath my fingernails, the grass is green, and there are leaves on the trees. Hallelujah! I love it. The sunshine is softening my sour feelings towards spring for being rather cruel to us. We have jumped right into summer, my favorite. Last week, I drug out my comfy lawn chair and sat outside for hours, just sitting. And refereeing the dogs' disagreements. When Spur felt threatened, he jumped clean over the arm rest and into my lap. Crazy pup.
I managed to also spend some time in the kitchen and added some pizzazz to our dinner menu with a few new recipes.
The first was pork roast with apple mustard glaze. I cooked up a pork roast once before, but this was the first time I have cooked one with bones. It seemed like it took forever! When it was finally done, I found the bones rather annoying. Or maybe there is a secret super easy method to cut it up? Nevertheless, the glaze made me forget about the long wait and the annoying bones. Apple juice and mustard seemed like a strange combination, but it was fantastic. Next time, I plan on doubling the sauce and using a boneless roast.
I don't have any pics of that. We were too busy eating! We had to wait two hours after all.
We consume a lot of chicken breast. It's inexpensive and versatile enough that we don't grow tired of it. Last week, I made broccoli and cheese stuffed chicken. I used what I had on hand so my ingredients varied slightly. I definitely did not have Laughing Cow cheese so I just used shredded, and it worked fine. Although, I would recommend at least using cut-up chunks of cheese to make it more cheesy. Also, I substituted crushed up corn flakes for Panko.
It came together pretty quickly and was much easier than I anticipated! I paired it with brown rice and honey roasted carrots. I eat those carrots like candy. Yum!
Here's to more time spent outside this week, digging in the dirt and soaking up the sunshine.
