Dinner was scarce this week. Kb was busy in the evenings and when left to my own devices, I struggle. I ended up with a half a bag of baked potato chips for dinner. Or canned pears. Or a bowl of cereal.
But we sat down and enjoyed a real meal last night. I texted Kb early in the day to let him know what awaited him on the dinner table. I was excited about trying a new take on an old recipe: lasagna roll ups. The recipe is a little fancy for plain, old me. I definitely dumbed it down a good bit. To start, I used ground turkey instead of ground beef, but don't tell Kb. It's cheaper and better for you. I also substituted cottage cheese for the ricotta cheese. You'd think we were health nuts! I just like the texture of the cottage cheese in my lasagna.
My assembly was quite different from the recipe. I started with a layer of cottage cheese, spread a layer shredded cheese, and then spooned a layer of the tomato sauce and ground turkey mixture that had been simmering. Roll'em up and put'em in the pan. Easy peasy.
Kb's response was... strange at best.
me: (Pronouncing the lasagna roll ups complete and handing Kb his plate.)
Kb: Hmmm
me: What?! (Boy, if you don't like this...)
Kb: It's just not what I expected.
me: Well, what did you expect?
Kb: Um. Something like torpedoes.
me: Torpedoes. I don't understand.
Kb: Ya know, like a burrito...but with lasagna.
(Who needs kids when you've got Kb?)
Whatever you want to call it, the final product was yummy. Although I think the roll up method took more time to prepare than the traditional method, the roll up method is now my preferred method of choice for lasagna. The roll ups were definitely easier to serve, pre-portioned, a lot less messy, and a little more fun!
